
I love curry and, trust me-I’ve tried plenty-but Blue Mountain Curry is hands down my favorite. Here’s the flavor trick that I learned-and this is the reason this curry hits the way it does. You’ve got to saute the curry seasoning in oil for about 5-8 minutes or so on low heat before adding the meat. That’s it. That’s the secret!
I used to toss everything in the pot and hope for the best. But when you warm the curry in oil first, the spices wake up. The smell alone is heavenly and let’s you know you’re on the right track. THEN you add your meat and the flavor is deep, fragrant and rich. Whether you like it mild or spicy, it comes in regular and hot-so you’re in control of the heat.
